Cutest cupcake video EVER: 3-year-old Makes Vegan Pumpkin Cupcakes

Pomegranate Cranberry Cupcakes with Vegan Buttercream!

Just in time for Thanksgiving!

In her post, "Cheering for the Underdog," Bittersweet blogger writes about the fall of the cupcake and how it has become somewhat of a "backup singer" this past year. But she wants to bring back the glory with a delicious mini cupcake--perfect for Thanksgiving.

Vegan Mexican Hot Chocolate Cupcakes with Recipe Link


How yummy do these Mexican Hot Chocolate Cupcakes look?! Did I mention they're vegan? The kicker that sold me on these chocolate delights was that instead of frosting, they're topped with a vegan coconut milk based whipped cream!

At first glance, this just looks like any other cupcake but after I looked over the ingredients it seemed that this cupcake was anything but ordinary. To promote your vegan cupcakes as vegan or not?

That is the question, also asked of other baked goods, by The Wall Street Journal in "Is That Cupcake Vegan Or Just Butter- and Egg-Free?" Excerpt:

BabyCakes NYC bakery specializes in vegan and gluten-free pastries and advertises that on its website. But inside its New York store, "I didn't put signs up that it was a vegan bakery. I didn't want to repel anyone," says owner Erin McKenna.

On a recent afternoon, Ms. McKenna, wearing a 1960s-style miniskirted uniform, demonstrated baking techniques in the kitchen, coagulating soy milk with cider vinegar and stirring it into red velvet cake batter. Customers studied the shop's pink cupcakes and chocolate whoopee pies. BabyCakes, which has outlets in Los Angeles and at Disney World in Orlando, had $1.8 million in sales last year...

Some conventional bakers and chefs agree. Candace Nelson, owner of 10 Sprinkles Cupcakes bakeries, says she and fellow judges on the "Cupcake Wars" series were surprised to find themselves naming vegan bakers episode winners in two consecutive seasons. "We were all like, wow, they're really good," she says.

5 coffee cupcakes and a recipe link to wish you a Happy National Coffee Day!

Happy National Coffee Day! I've been drinking coffee for about a year and can safely say that I'm now addicted to the taste and feel and, yes, caffeine. It's gotten to the point that until I've had my first cup in the morning I'm not really all there (sometimes, I'll admit, it's more like until I've had my second cup).

What about you? Do you like coffee cupcakes or would you prefer to enjoy a cup of coffee alongside a cupcake? Long before I started drinking coffee, I enjoyed the flavor of coffee ice cream, and to me that is what a coffee frosting should try to approximate, a sweet but strong flavor. But there are all sorts of ways to incorporate coffee into a cupcake, from the cake to the frosting to adding beans on top and much more.

In the spirit of coffee-loving as well as appreciating the spirit of food holidays, here are 5 coffee cupcakes as a way to celebrate.

Coffee and donut cupcake (the frosting is a very strong, delicious coffee flavor) I recently tried by Retro Bakery in Las Vegas, Nevada - and yes, I know my photograph perhaps doesn't do it justice, but trust me, it was good, and if you're ever at Retro I would definitely try this one. The coffee frosting and glaze on the cake balance each other out very well.
