I chose cashew butter in place of the pb (I thought pb-mint was too weird a combination), and I upped the ratio a little bit so it’d be thicker and easier to pipe. I also added a little peppermint extract and (obviously) a few drops of green food coloring. After mixing, I let it sit a few hours so it would be super-thick.
