Here's a bright and delicious slow cooker stew recipe with sausages - and it's tasty using any sausage you choose, from free-range roaming buffalo to furry-friendly vegan. Scrumptious. Seriously. Make it for the Big Game. You know, the one with a pigskin ball and helmeted men in shiny tights. Throw all the ingredients in a Crock Pot and go root for your favorite tight end. Make a hot artichoke dip and grab some gluten-free chips. Game on.

That's Some Sweet Pie Crust

This great pie crust video features Alan Carter, the pastry chef at Mission Beach Cafe, a great little neighborhood restaurant just a block away from our home in San Francisco. I've been planning on filming a new pie crust recipe, and have always wanted to try the vinegar/water method. 

Knowing that our neighbor, Chef Carter, known for his world-class pies, uses that same technique has me very excited to give this a try. The clip comes via The Feast, who credit Mike Anderson, from NBCBayArea.com, for the video's production. Enjoy!

Buffalo Chicken Pizza

I haven't made pizza in a long time so we decided to try Buffalo Chicken Pizza. It features all of the great flavors of buffalo wings but is still a somewhat healthy, balanced meal. You can prepare the crust in advance using an earlier recipe for Neapolitan Pizza Dough. This recipe uses 4 1/2 cups of all-purpose flour. However, for this pizza I used 2 1/2 cups whole wheat flour and 2 cups of all-purpose flour for an even better tasting (and healthier) crust.

The Buffalo chicken takes about 6 hours in a slow cooker, so you can make the pizza dough the night before and load up the slow cooker before work. When you arrive home, you can have these pizzas served up within 30 minutes.

Recommended Equipment:
Slow cooker

Ingredients:
Neapolitan Pizza Dough
2 tbsp un-salted butter
3 chicken breasts
1 bottle of your favorite wing sauce. I used Kroger brand.
Buffalo Wing Sauce
1/2 package of Hidden Valley Ranch dressing powder.
Hidden Valley Ranch dressing
1/2 red onion
blue cheese dressing
1 rib of celery, diced
mozzarella cheese, shredded

Preparation:
  1. Place the butter, chicken, Hidden Valley Ranch dressing powder, and 1/2 bottle of the wing sauce in the slow cooker. Cook on medium for 6 hours.
  2. Shred the chicken and add a little more of the wing sauce to the chicken, about 2 tbsp.
    Buffalo Chicken
  3. Place pizza stone in the oven and preheat the oven to 450 degrees Fahrenheit.
  4. Next, use one of your Neapolitan pizza doughs and form a thin oval crust.
  5. Cover it with a thin layer of mozzarella cheese.
  6. Cover the cheese with a layer of the Buffalo chicken.
  7. Garnish with sliced red onions.
  8. Slide pizza onto the pizza stone in the oven and bake for 10 minutes.
  9. Remove pizza and garnish with diced celery and blue cheese dressing.

Spicy Orange Chicken Wings - It's Not a Party Until the Panda Wings Come Out!

Here they are – easy and delicious, spicy orange chicken wings, cleverly named (according to me anyway) after the spicy orange chicken served at Panda Express. By the way, this recipe has nothing to do with killing, riding, eating, rubbing, growing wings on, or otherwise abusing panda bears.

We are right smack in the middle of chicken wing eating season, and with the Super Bowl just around the corner (Go Jets!), I figured it was high time for a new wing fling. The recipe could not be simpler to make, and if you can somehow manage to whip up a batch of these oven-fried chicken wings to glaze, you'll be in sticky-finger-heaven.

Since this was my first time trying this, I went very basic, and was extremely happy with the results. It was very similar in taste and texture to the Panda orange glaze, and done so with no gloppy cornstarch, which is not very nice cold.

Next time I will try the additions of ginger and garlic, and maybe some toasted sesame seeds. In the meantime, I really hope you give these a try, and please let me know how your particular variations come out. Enjoy!



Spicy Orange Chicken Wings Ingredients (enough for about 5 lbs of wings):
2 big tablespoons Sambal, or other Asian-style chili paste to taste, or may sub red pepper flakes to taste
1 cup orange jam or marmalade, (strain if contains an excess of orange rind pieces)
1/3 cup rice vinegar
1/4 cup hoisin sauce
1 tablespoon soy sauce
Suggestions for optional additions:
finely minced garlic cloves
finely grated fresh ginger, optional
minced green onions
toasted sesame seeds

Gluten-Free Carrot Muffins

Gluten free carrot muffin with raisins quinoa flakes and coconut flour
Wake up with a warm and lovely carrot muffin.

This is my first muffin recipe for the New Year. A tender little bundle of gluten-free joy. So cute and sunny. I love the color. The subtly fragrant texture of finely grated organic carrots, coconut flour and breakfast quinoa flakes. A hint of cinnamon and ginger. A bite of raisin. Seriously chai worthy. And more fiber rich than say, a powdered donut. Or your average gluten-free bagel which is nothing but starch. This a treat you can eat without too much guilt.

I'm about to air a video for, "Panda Wings." As the name suggests, this will be another fabulous addition to our award-winning collection of chicken wing recipe videos. The "panda" part comes from the fact that the spicy orange glaze you see glistening here, is inspired by the most popular entree at the popular Chinese fast food chain, Panda Express. 

So, can I use this name? Will I get letters from their lawyers? Are you a trademark attorney, or at least play one on the Internet? I'd love to hear what you think!
