This week I've got a lovely tender tea bread recipe for you- a gluten-free carrot bread fragrant with chai spices and studded with juicy sweet raisins. Ever since I baked those happy, sunny carrot muffins I've been pondering carrot bread. I wanted to create a new gluten-free bread recipe that featured several whole grains, including (gasp!) brown rice flour. Shocking, I know. Long time readers will confirm I'm not the biggest fan of rice flours. I almost never bake with them. And yet. There I was. Standing in the Whole Foods check out line. Buying a bag of Bob's Red Mill organic brown rice flour. On impulse. Because it just sounded good to me. Wholesome. Nutty.

And friendly to carrots.

Which is important in a gluten-free recipe. The friendliness. You want all your ingredients to get along. You want your flavors co-mingling in savory-sweet bliss. Supporting one another's strengths. Forgiving each other's weaknesses. No single gluten-free flour is perfect on its own, as you well know. Going solo doesn't work. It needs a supporting cast. It needs to find balance and achieve harmony via relationships. Give and take. That's what it's all about in the crazy game of gluten-free baking.

Chocolate Cake Frosting Recipe

Chocolate IcingThis is a good all-purpose recipe for chocolate frosting. I use it when making Mayan Chocolate Cake, but it works well with any type of basic cake or cup cake recipe.

Recommended Equipment:

stand mixer

Ingredients:
6 tbsp unsweetened cocoa powder
2 3/4 cup confectioners sugar
6 tbsp butter, at room temperature
1 tspn vanilla extract
5 tbsp evaporated milk
1/2 tbsp Kahlua (optional)

Preparation:
  1. In a bowl, mix together the cocoa and the confectioners sugar and set aside.
  2. Using the mixer, cream the butter until smooth.
  3. Alternate adding the sugar and the evaporated milk to the creamed butter running the mixer on low.
  4. Mix in the vanilla extract.
  5. Adjust the consistency by adding additional sugar or milk (if necessary).

Treat yourself. Make this guacamole tonight. I beg you. You'll go loco over it. Trust me. It's the tomatillos and fresh lime juice that nudge this gluten-free vegan guac recipe into super favorite status-- which, by the way, is why I am excavating it from the dusty archives. In case you missed it.

Predicting the Super Bowl Winner with Chicken Wing Bones

I feel kind of guilty. I've been publishing this blog for four years now, and I this is the first time I'm letting you in on my magical method for picking the Super Bowl winner. I can't tell you how or where I learned how to do this (long story short, I'd be killed by a very tall, dreadlocked gypsy if I did), but I can tell you it's a sure thing. 

Normally, I'd never give insane advice like withdraw your children's college funds, and bet everything on the game, but here, it would be crazy not to. ;-) Enjoy!

Cream of Broccoli Soup Recipe with Coconut Milk

It's hard to not worry these days, I know. Epic snow storms dumping the white stuff without mercy- again. Students and protesters in Cairo risking life and limb for political change. Anderson Cooper- our lovely Silver Fox-  getting punched in the face by pro-Mubarak thugs. Where will it all lead, I ask you?

It's mighty tough for a sensitive soul prone to worry to cope with all this mishegas. To find a little comfort in this volatile atmosphere. That is why I am sharing another soup recipe. Just in case there is a kindred spirit out there in need of a bowl of creamy veggie comfort. A gluten-free vegan soup worthy of the Chinese New Year. It's the Year of the Rabbit, by the way (or as we like to say in my house, BUNNY!). And bunny's aren't known for punching or, in general, wreaking havoc. Unless you count Peter Rabbit's sneaky excursions into Mr. McGregor's garden or Max's devouring love of chocolate chickens.

The year of the bunny is ostensibly devoted to a milder temperment. To kindness and beauty and yes, comfort.

So it seemed only fitting I cook up a batch of vegan soup today as fresh and non-toxic as could be. Creamy, good-for-you soul food.

And by the way. Punxatawny Phil predicted an early spring today. True or not, it's got to be a welcome glimmer of hope for those shoveling out from under heaps of snow. Right?

This Clams Casino Dip Will Cover the Spread at Your Super Bowl Party

I love clams casino, and I made that fact known publicly in this post last year. Certainly, a tray of hot clams casino would make a handsome addition to your Super Bowl spread, but large, fresh clams aren’t cheap, and you're probably looking for something a little simpler, and that can be made ahead of time.

This clam dip appetizer (which is technically a "spread" as I explain at the end of the video), contains the same basic ingredient list as traditional clams casino, and while it really tastes nothing like its hot namesake, I think any fan of the clam dip will be very happy with it.

You'll see a caption during the video saying to make the dip at least four hours ahead of time for best results. This time allows the flavors to develop and really makes a difference. What I failed to add was that you should also take the spread out of the fridge and let in sit out for an hour or so before the party, so it can warm up a bit.

By the way, if the setting looks a little unusual, that's because I'm back in New York's snowy Finger Lakes area visiting my mother, and filmed this at my Aunt Angela and Uncle Billy's home. Many of you have enjoyed Aunt Angela's cabbage rolls recipe, as well as Uncle Billy's famous Chicken D'Arduini and homemade pasta (and if you haven't, click on the links and check them out). Enjoy!


Ingredients:
2 (6.5 ounce) cans minced clams, with juice
1 pound cream cheese
6-8 strips bacon
1/2 tablespoon butter
1 jalapeno, seeded, minced
1/2 cup small diced red bell pepper
1/3 cup small diced celery
2 cloves minced garlic
1/4 cup minced green onions, save tops for garnish
1/2 lemon
hot sauce to taste
freshly ground black pepper to taste
