Banana Muffin Recipe

banana muffinsSometimes we have leftover bananas that we need to use up before they go bad. This recipe for banana muffins is a good way to use them up. They are easy to make and if you store them in an air tight container they will last up to 3 days.

Ingredients:
2 bananas, mashed
1 cup sugar
1 egg
1/2 cup butter
1 tspn baking soda
1 1/2 cups flour
1 tspn vanilla
1 tspn nutmeg

Preparation:
  1. Preheat the oven to 350 degrees Fahrenheit.
  2. In a large mixing bowl, cream the butter and sugar.
  3. Beat in the eggs.
  4. Mix in the baking soda, nutmeg, flour, and vanilla.
  5. Add the mashed bananas and mix all of the ingredients until well combined.
  6. Pour the batter into paper lined or greased muffin tins.
  7. Bake for 20 minutes.
